Join us for Field to Flame – a one-night-only collaboration dinner featuring Chef Kirk Westaway and Chef Christopher Clarke from The Albion by Kirk, alongside guest chef Trương Quang Dũng, the visionary behind Chapter Dining and Tales by Chapter.
Rooted in seasonality, sustainability, and a shared respect for ingredients, the chefs present a refined seven-course menu seen through three distinct perspectives.
Highlights include dishes such as ocean tart with wampee and fish sauce, smoked watermelon ponzu, and butter-poached seabass with Da Lat caviar – each a quiet story told through fire and flavour.
The evening unfolds high above the city, in the elegant dining room of The Albion by Kirk.
Here, modern British charm meets the golden glow of Saigon’s skyline.
An optional wine pairing will also be available, carefully curated to match the rhythm of the season.
